Cracker Cod Recipe for Atlantic Cod

Cook Time: 14 minutes
Ingredients: -Ritz or Townhouse butter crackers.
-A stick of butter.
-Any basic lemon & pepper seasoning.
-How ever many Cod Fillets you want or have!
-Baking Sheet/Tin Foil

Directions: Take a large plate, or rounded bottom soup bowl; place half a stick of butter on it and toss it in the microwave, heat 30-45 seconds or until melted completely. Next grab a large ziploc bag, preferably a gallon size, take a package of Ritz or Townhouse crackers, dump them in the bag. Then grab your lemon pepper seasoning and sprinkle about a tablespoon worth in the baggie as well. Seal the air out of the bag, and smash the crackers in the bag with your fist, until finely mashed, then shake bag to mix up seasoning with crushed crackers; dump on a plate and set aside. Take your melted butter plate, and a Cod filet and dip the entire filet in the melted butter, both sides evenly. Let any excess butter drip off, don't want it TOO buttery to mask the flavor of the Cod itself. Dip filet of Cod on your plate of crushed crackers and seasoning. Turn both sides, and evenly coat filet with cracker; as much or as little as desired. Repeat with as many filet's as you wish. Place filet's on tin foil, or a buttered/sprayed baking sheet (DO NOT COVER ENTIRE FILLET'S IN TIN FOIL, JUST PUT THEM ON TOP. DO NOT FOLD OR ENCLOSE) in the oven, and bake for roughly 10-15 minutes depending on high thick the fillet's are; at roughly 375 degrees. Serve with steamed vegetables, or rice pilaf; or both! Enjoy!!
Other Notes: This recipe can be used with a variety of fish, mostly saltwater species are best though. It's an easy, and fun way to make a fish dinner that tastes absolutely delicious and will please all!
